Chicken Rice Pilaf

  • 3 1/2 cups rice
  • 3/4 cup olive oil
  • 2 cups celery, diced
  • 1 1/2 cup onions, diced
  • Garlic powder, curry powder
  • 1/2 cup all-purpose flour
  • 6 cups water
  • 3 cups plain yogurt
  • 2 cups carrots
  • Chicken thighs, cooked and diced
  • Salt and pepper to taste
  • 1 cup cilantro chopped for topping (optional)


  1. Cook the rice and set aside.
  2. Sauté the chopped celery and onions
  3. Lower the heat and add in the yogurt, water and flour.
  4. Stir the mixture as it thickens and simmers
  5. Add the chicken and carrots to the rice
  6. Mix in the yogurt mixture.
  7. Serve!
