Salsa Chicken Bake

Three veggies, chicken and cheese come together for an easily prepared dinner!

  • Chicken breast, boneless and skinless
  • Seasonings: 1/4 teaspoon cumin, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon garlic powder, 1/4 teaspoon red chili pepper flakes
  • 2 cups diced tomatoes
  • 1/2 cup chopped onion
  • 1/3 cup chopped jalapeño
  • 1/2 cup fresh chopped cilantro
  • 1 cup shredded Mozzarella
  1. Dice all your veggies
  2. Cut your chicken into cubes or strips and place in a glass dish
  3. Season your chicken
  4. Add the diced tomatoes, onion and jalepeño on top
  5. Cover with cheese
  6. Bake at 400˚F for 25 minutes
  7. Top with cilantro and enjoy! Serve with rice or tortillas on the side!
