Veggie Fritters

Our take on an egg-celent breakfast includes lots of veggies!

Tierra Tips to Engage your Little Helper:

  • Work on your little ones fine motor skills! Squeeze moisture out of zucchini, crack eggs, stir in the vegetables. These all work on grip and movement!


  • 4 cups shredded zucchini
  • 4 cups shredded carrots
  • 1 ⅓ cups flour
  • ⅔ cups chopped scallions (optional, but delicious!)
  • 4 large eggs, lightly beaten
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt & pepper


  1. Pat the zucchini dry (or use a strainer to get rid of excess moisture).
  2. Combine the zucchini, carrots, flour, scallions, eggs, garlic and salt and pepper in a bowl and stir.
  3. Off to the side, put paper towels on a plate to set the fritters on once they’re cooked.
  4. Add some oil into a pan, and pour scoops of the mixture (about ¼ cup) into the pan to cook. Leave space between the scoops so they can cook on their own.
  5. Once they’ve cooked, you can place them on the paper towels for any excess oil to dry
  6. Enjoy- pair with a side of fruit and a slice of toast for a well balanced breakfast!
